在眾多菌類食材之中,羊肚菌最容易讓人留下印象的,便是它獨特的外形。羊肚菌的菌帽呈卵形、圓錐形或近似蜂巢狀,表面布滿不規則的凹陷與皺褶,外觀與羊肚相似,因此得名「羊肚菌」。

乾燥後的羊肚菌顏色通常由黃褐色至深褐色不等,菌體輕盈而帶有濃郁的自然菌香。浸泡後,菌帽會逐漸恢復柔軟的質地,凹凸分明的蜂巢狀紋理更加明顯。

在傳統食療文化中,羊肚菌常被視為具有滋養特色的珍貴菌類食材,經常用於湯品、燉品及各類滋養料理。它本身味道鮮香,與雞肉、排骨及其他食材搭配時,可以為湯品增添自然的菌香與層次。一朵外形獨特的野生菌類,經過採收、清理與乾燥後,成為餐桌上珍貴而熟悉的滋養食材。

Among mushroom ingredients, Yang Du Jun is particularly recognisable for its unique appearance. The cap of the morel mushroom is typically egg-shaped, conical or honeycomb-like, covered with irregular pits and ridges. Its appearance resembles the texture of a sheep’s stomach, giving rise to its Chinese name.

After drying, the mushroom generally ranges from yellowish-brown to dark brown. It is light in weight and has a rich, distinctive mushroom aroma. After soaking, the mushroom gradually regains a softer texture, while its characteristic honeycomb pattern becomes more pronounced.

In traditional dietary culture, morel mushrooms are regarded as a valued nourishing mushroom ingredient and are commonly used in soups, slow-cooked dishes and nourishing recipes. Their naturally rich flavour pairs well with chicken, pork ribs and other ingredients, adding depth and a distinctive mushroom aroma to soups and dishes. A uniquely shaped wild mushroom, carefully harvested, cleaned and dried, becomes a prized and familiar ingredient in traditional nourishing cuisine.
